What I eat while travelling as a model, vegan and gluten free cake recipe, crispy chickpeas!

This is another What I eat in a day
Hope you like it and have a nice day!

For the blackcurrant cake
1 cup of apple sauce
1 cup of aquafaba
1 cup of rice flour
1 cup of amaranth or oat flour
3/4 cup of coconut sugar(or the equivalent amount of stevia)
3/4 cup of cashew or almond butter
zest of lemon(optional)
pinch of salt
1 tsp of baking soda
splash of apple cider vinegar
frozen berries of your choice
Preparation
MIx apple sauce, nut butter and aquafaba. Add to the same bowl rice and amaranth flour, milled linseed and stevia.
Leave it to rest for 15 minutes.
Meanwhile, preheat the oven.
After the time is up add baking soda, salt, lemon zest and a splash of apple cider vinegar, mix to combine.
Cover completely the bottom of your baking tin with berries and pour the dough over.
Bake in the oven for 35-45 minutes or till golden brown and the toothpick inserted in the centre comes out clean.
let it cool completely in the tin before flipping.
