Vegan Peanut Butter Chocolate Cake

Cake Ingredients:
– 2 cups all-purpose flour
– ¾ cup unsweetened cocoa powder
– 2 teaspoons baking powder
– 1½ teaspoons baking soda
– pinch of salt
– 1 cup hot water
– 1-2 teaspoons espresso powder
– ½ cup oil
– 1 ⅓ cup sugar
– 2 flax eggs
– 1 tbsp vanilla
– 1 cup almond milk

Peanut Butter Frosting Ingredients:
– 1 tbsp vegan butter
– ⅓ cup peanut butter
– 1 cup powdered sugar
– 1 tsp vanilla
– 1 tbsp almond milk

Chocolate Frosting Ingredients:
– 2 tbsp vegan butter
– 1 tsp vanilla
– 1 cup cocoa powder
– 1 cup powdered sugar
– 1 tbsp almond milk

1. Mix together the flour, cocoa powder, baking soda, baking powder, and salt. Create the coffee in a separate mug (combine the water and espresso powder).
2. In a separate bowl, whisk together the oil and sugar. Mix in the flax eggs and vanilla.
3. Filter in your coffee (to make sure there are no granules left) and mix that in.
4. Alternate adding in ⅓ dry, ½ cup milk, ⅓ dry, ½ cup milk, ⅓ dry.
5. Separate into 3 eight-inch cake pans and bake at 350 F for 20-25 minutes.
6. While baking, cream and whisk together the vegan butter, peanut butter, and vanilla. Add in the powdered sugar. Mix in almond milk until you get the desired consistency (around 1 tbsp).
7. Cream the vegan butter together with the vanilla. Add in the cocoa powder and powdered sugar. Mix in the almond milk until you get the desired consistency (around 1 tbsp).
8. Frost the cakes once they have completed cooled (peanut butter in between & as decor, chocolate as the outside). Enjoy!
