It is the holiday season. What better way to celebrate than to make vegan Christmas Cookies! Vegan cookies are so easy to make. In this recipe all you need is a few simple ingredients and your well on your way to a melt in your mouth vegan gooey butter cookie.
Cream softened vegan butter( I used earth balance) vegan cream cheese ( I used kite hill, trader joes has a cheaper cream cheese and tofutti) and 1 tsp of vanilla in a bowl with an electric mixer until nice and smooth. Then add in a pinch of baking powder and 1 box of yellow cake mix (I used Duncan Hines) and 1 eggs worth of egg replacer. Mix until combined then add in 1/2 cup of holiday sprinkles and fold it into the batter. Let dough chill in freezer for 10-15 mins. Once done, take a small bowl and add some powdered sugar. Roll the dough into small balls and dip in powder sugar then place on baking sheet. If desired roll dough in some more sprinkles and then bake at 350 for 12 mins.
