It’s vegan! It’s chocolate! It’s Christmas!!!!! Tasty Vegan Yule log that looks like an actual log.

Vegan Yule log
For the Cake
120g self raising flour
90g cocoa powder
2 Tbsp. cornflour
1 Tsp. baking powder
¼ Tsp. sea salt
120ml aqua faba chickpea brine
60 ml vegetable oil
1 Tsp. apple cider vinegar
splash of vanilla bean paste or extract
200g vegan spread
500g unrefined icing sugar
Vanilla and Baileys to taste
200g dark choc (dairy free)
100ml oat cream
Preheat oven to 170 degrees C
Grease a 9″x13″ cookie sheet/pan and line with parchment paper.
In a large bowl, whisk your dry ingredients together
Next, mix up the wet liquid and add to the dry,mix until combined.
Add the batter into prepared pan and smooth over
Bake for about 12 mins until just cooked
Roll up the cooked sponge and leave to cool
Unroll and fill with the Baileys Buttercream
Roll back up and chill
Slice and assemble to your log shape, Cover over with chocolate buttercream and decorate as required, add icing sugar just before serving.
