Jen’s Cook Nook | Chocolate Chip Cookies (Vegan Friendly)

Today I am sharing my current favorite vegan friendly chocolate chip cookie recipe. These cookies are divine! My family loves them. I hope you do, too! I’d love to know if you try them out. Enjoy!

This is the original recipe I adapted from Six Vegan Sisters:

Vegan Friendly Chocolate Chip Cookies:
1.25 cups all purpose flour
1 teaspoon cornstarch
.5 teaspoon baking soda
.5 teaspoon salt
.5 cup butter alternative
.5 cup light brown sugar
.25 cup granulated sugar
1 teaspoon vanilla
.25 cup plant milk
.5 cup mini chocolate chips

– Preheat oven to 350º
– Whisk dry ingredients
– Cream butter and sugars in a separate bowl
– Add vanilla
– Slowly add half of dry ingredients to wet and mix until incorporated
– Add plant milk and mix until incorporated
– Add remaining dry ingredients and mix until incorporated
– Stir in chocolate chips
– Use a tablespoon to measure out equal scoops of dough and roll into balls
– Place dough balls a couple of inches apart on lined cookie sheets
– Bake for 5-6 minutes and then rotate pans and bake for an additional 5-7 minutes until golden brown
– Allow to cool completely before storing
– Store at room temperature
* Makes 32 cookies *
