Unicorn POO Cookies! Egg Free, Gluten Free, Vegan Aquafaba Unicorn Poo Meringue Cookies designed to make your kids giggle! If your kid is between 3-6 years old (and possibly older for some adults) then potty humor is right in their wheel house!

Ingredients

Aquafaba (water from 2 cans of garbanzo beans unsalted rendered down to one cup and chilled)
1/2 tsp. of cream of tartar
1 tsp. of flavor extract of choice
1 tsp. of vanilla extract
gel food coloring of choice
1 cup of sugar
1/4 cup of water

Standing Mixer:
or Hand Mixer:
Piping bags fitted with Wilton 1M piping tip:
Baking Sheet lined with parchment paper
Pre-heated oven to 200 degrees F

Let’s Go!
Reserve liquid (aquafaba) from 2 cans of garbanzo beans and heat to a boil then, simmer for 20 min. Render the aquafaba down to 1 cup and refrigerate for at least 2 hours. Heat the water and sugar to a boil for 5 min. Set aside to cool. Mix your aquafaba on medium until you see some froth, add cream of tartar and switch to high speed. As you get soft peaks, slowly add vanilla, extract of choice and slowly drizzle your sugar solution. You’ll be on high for 8-15 minutes depending on your mixer until you have stiff peaks. Fill piping bags fitted with the tri-color tips then, add a 1A tip for Unicorn Poo or 1M for Unicorn Pillows. Pipe onto parchment paper. Place in oven for 2 hour at 200 degrees F. DO NOT OPEN the oven door when cooking is complete, just turn off the oven and let sit overnight in the oven to complete the drying process. In the morning, place in an air tight container. Voila! Unicorn Poo & Unicorn Pillow Aquafaba Meringue Cookies. Light, crispy, crunchy, airy that melt in your mouth!
