DAIRY FREE VEGAN GLUTEN FREE CHOCOLATE CHIP COOKIE RECIPE
Preheat oven to 350 degrees F.
Mix dry ingredients together: 2 cups oat flour, 1 cup coconut sugar (I’m using David Wolfe’s cane juice crystals), 1 teaspoon baking soda, 1 teaspoon baking powder, 1/2 teaspoon sea salt
Add in wet ingredients: 1/2 cup coconut oil, 2 eggs (or chia/flax seeds to make them vegan — see below), 2 teaspoons vanilla extract
Mix together until good consistency. I ended up adding a bit more oat flour at the end.
Fold in about a 1/2 cup vegan chocolate chips (I use Enjoy Life brand).
Roll into 1 inch balls and place on a cookie sheet. Bake for 10 minutes.
TO MAKE COMPLETELY VEGAN, SUB EGGS FOR CHIA SEEDS OR FLAX SEEDS. I suggest chia seeds, to avoid the strong flavor of flax. Take about 1 cup chia seeds and soak them in water for about an hour before adding them to the bowl.
