3/4 cup organic brown sugar
1/4 cup coconut oil, softened
2 tbsp. almond milk (or other non-dairy milk)
1 tsp. vanilla extract
1 1/2 cup gluten-free oat flour
1 cup flaked coconut (plus about 1/4 cup more for topping)
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
Preheat the oven to 350 degrees Fahrenheit. To a bowl, add brown sugar, coconut oil, almond milk, and vanilla extract. Stir well. Add oat flour, coconut, baking powder, baking soda, and salt. Stir well. Scoop and press the dough onto a cookie pan. Press a little more coconut on top of each cookie. Bake 9-12 minutes. Let cool a little on the pan before transferring to a cooling rack. Makes one dozen cookies.
