Biscotti Amarena e Mandorle – Cherry & Almond Flour Cookies

300gr of peeled white almonds (or almond flour)
220gr of icing sugar (powdered sugar) + icing sugar for the final phase
85gr of egg white (2.5 egg whites) or aquafaba
zest of one lemon (optional, but recommended)
Cherries in syrup (Amarena cherries, approx 50 of them)

Oven temp: 350F/180C
Bake time: 10 minutes
