*Cake – (Full Recipe) Half Recipe*
• (4 cups) 2 cups unsweetened Almond Milk
• (4tsp) 2 tsp apple cider vinegar
• (2 ½ cups) 1 1/4 cups unsweetened applesauce
• (1 ⅓ cup) 2/3 cup melted coconut oil
• (4 tsp) 2 tsp vanilla extract
• (4 cups) 2 cups flour
• (1 cup) 1/2 cup sugar
• (1 ½ cups) ¾ cup maple syrup
• (2 cups) 1 cup unsweetened dark cocoa powder
• (4 tsp) 2 tsp baking soda
• (2 tsp) 1 tsp baking powder
• (½ tsp) 1/4 tsp salt

*Frosting – (Full Recipe) Half Recipe*
• (1 cups) 1/2 cup vegan butter (softened)
• (1 cup) ½ cup vegetable shortening
• (4 tsp) 2 tsp vanilla extract
• (½ cup) 1/4 cup unsweetened original Almond Milk
• (6 cups) 3 cups powdered sugar (6 cups) 3 cups powdered sugar
• (1 ⅓ cups) 2/3 cup unsweetened dark cocoa powder
• (½ cup) 1/4 cup dairy-free semisweet chocolate (melted and slightly cooled)

– Preheat oven to 350°F.
– Cut parchment paper to fit into 9-inch round cake pans. Butter and dust pans with cocoa powder, shake out the excess, place parchment paper and set aside.
– Mix the (2 cups) almond milk and (2 tsp) vinegar in a large mixing bowl, and let set for a few minutes to activate.
– Add the (⅔ cup) coconut oil, (2 tps) vanilla extract, (¾ cup) syrup and (1 1/4 cup) applesauce and beat until foamy. If coconut oil hardens, microwave the mixture in 10-15 second increments until melted.
– Sift the (2 cups) flour, (½ cup) sugar, (1 cup) dark cocoa powder, (2tsp) baking soda, (1tsp) baking powder, and (½ tsp) salt.
– Slowly add to the dry ingredients into wet mixture while beating. Beat until no large lumps remain. It should be creamy and pourable.
– Divide batter evenly between cake pans.
– Bake 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely before frosting.
– While cooling, prepare frosting by beating together all ingredients until light and fluffy, adding the powdered sugar in small amounts until you reach desired consistency and sweetness. If it becomes too thick, add more almond milk. If it’s too thin, add more cocoa powder or powdered sugar.
