3/4 cup non-dairy milk
1 tsp. lemon juice
2 1/2 cups all-purpose flour
1 Tbsp. baking powder
1 tsp. salt
1/2 cup vegan margarine
1/2 cup green apple, finely diced
1/2 cup vegan cheddar, shredded (I used Daiya cutting board shreds)
1 Tbsp. green onion, chopped (optional)
Preheat the oven to 450 degrees Fahrenheit. To non-dairy milk, add lemon juice, and set to the side. To a bowl, add flour, baking powder, and salt. Stir together. Add vegan margarine, and cut in. Add apple, vegan cheddar, and green onion (if using) and stir until well combined. Pour in the non-dairy milk mixture, and stir until the dough comes together. Turn the dough out onto a floured surface, sprinkle with flour, and pat down flat. Use a circle cutter to cut the dough into biscuits, and place on an ungreased baking pan. Repeat until all the dough has been used. Bake 15-20 minutes. Makes one dozen biscuits.
